Made with lean chicken breasts, the mix of spice and your home-made healthy chicken stock delivers the needed nutrition and flavors for you.

Recipe notes
1- To adjust the recipe heat, remove the seeds from the Thai chilies while slicing, and taste while adding the sriracha hot sauce to get the optimal spicy taste you want.
2- Chicken breasts are preferred over chicken thighs because breasts are cooked easier and consume less time, also have fewer fats and more lean protein.
3- You can use any type of noodles you want, rice noodles are recommended as it absorbs the flavors well, and it keeps the texture while cooking.

Heat olive oil in a large pan over medium heat, Then Add onion and carrot and stir for 3 to 4 minutes, then add the sliced mushrooms and cook until soft and shrunken in size, about 3 minutes more. Add garlic, ginger, and chilies and stir for 1 minute until you get the aroma.

Add the chicken breasts to a pre-heated pan, and grill it on each side for 3 minutes, then remove the chicken breasts and shred them with a fork.

Add the shredded breasts to the vegetables, stir them, then add the chicken stock and water and let the mix simmer for 10 to 15 minutes.

Boil the rice noodles in salted water for 3 minutes, then remove it and add it to the simmering mix, add soy sauce and sriracha hot sauce and let all cook for 7-8 minutes.
