Drain oysters and reserve the liquid. Mince oysters and place in a pan, add water and reserved liquid and boil it. Reduce heat, cover and let it simmer for 10 minutes.

Then you can force the mixture through a fine sieve into the pan. Measure the liquid, adding 2 tablespoon light soy sauce to each 1/2 cup of the liquid.
