1 tbsp olive oil
1 tbsp butter (or more oil)
2 garlic cloves , minced
1 onion , chopped
3 carrots
3 celery ribs
3 tsp Vegeta stock powder
1/2 tsp dried parsley
1/2 tsp dried thyme, optional
1/4 tsp black pepper , finely ground
4 cups / 1 litre chicken broth , low sodium
4 cups / 1 litre water
600 g / 1.2 lb bone in
1 cup / 180g long grain white rice
Salt, adjust to taste
1 tbsp finely chopped parsley

Chinese chicken rice soup is a dish OF Anhui cuisine.

Whether you’re feeling unwell, or it’s a miserable day outside, nothing warms the soul like chicken soup.

But it can’t be just any chicken soup.

It needs to be flavorful, nourishing and homemade.

If you have a little free time on your hands, this Chinese Chicken Rice Soup will have you slurping your way to the bottom of the bowl.

Cooking Tips

  • Chicken

If you’re running short on time, you can use pre-cooked chicken, however, if you want a flavor punch, we recommend simmering uncooked chicken pieces in your broth.

  • Rice

The great thing about this soup, is you can use any type of rice – white, brown, wild, black, basmati, Arborio, jasmine or sushi rice.   By adding uncooked rice, you will find it soaks up the delicious flavors of the broth.  Just keep in mind that wild, black and brown rice takes more time to cook.

  • Leftovers

If somehow you haven’t devoured this soup in its entirety and need to store it, you’ll first need to separate the rice from the liquid – otherwise the rice will continue to soak up the broth.

Use a slotted spoon or colander to remove the chicken, vegetables and rice and place into a container.  Then pour the broth into a separate container and freeze or refrigerate both containers.

Also, check your chicken is cooked all the way through before eating – no pink!  But don’t worry – there’s no danger of uncooked chicken with this soup as you’ll be giving it plenty of time to cook while it is simmering in the broth.

Place butter and oil in a large pot over moderate heat. Add garlic and onion, cook for 5 minutes until onion is translucent .

Add celery and carrots, stir fry for 1 minute.

Cover with a lid, simmer on medium for half an hour. Adjust heat so that it's bubbling a great amount, but not mad energetically or super gradually. Skim excess foam build up once or twice (maybe not crucial ( only makes noodles clearer)6. Remove soup from stove.

Remove lid, add rice. Stir, cover, simmer 15 minutes.

Remove chicken to a large bowl. Shred With two forks, discard bones then stir into soup.

Stir in half of the parsley, taste for salt And add if needed. Serve, then garnish with extra parsley
