½ to 1 lb. ground beef
1 cup mayonnaise
1/3 cup BBQ sauce
2 cups tomatoes (your choice), chopped
1 16 oz can corn (use organic), drained
6 green onions, chopped
1 cup shredded cheddar cheese
¾ tsp cumin powder
¼ tsp red pepper flakes
2 Tbsp mustard
2 Tbsp Worcestershire sauce
2 tsp hot sauce

Cowboy Pasta Salad is a delicious personal favorite and, even better, it is as versatile as it is easy to make.  For best results, use organic pasta shells and, if you are using them, use humanely raised bacon and beef.

 

Ingredients (makes about 10 servings):

 

1 box pasta shells your choice (although the mini ones mix better)          $3.50

½ to 1 lb. ground beef                                                                                          $3.50 – $6.50

1 cup mayonnaise                                                                                                  $0.75

1/3 cup BBQ sauce                                                                                                 $0.75

Cooking Tips for cooking Cowboy Pasta Salad

  1. One reason for cooking the beef after the bacon is that you can then brown the meat in the bacon fat for that extra “cowboy” flavor. However, feel free to drain the fat.
  2. It is best to add the cumin and pepper while you are browning the beef, this gives the spices a flavor boost. Also, adjust the seasonings to your palate, the measurements above are general suggestions.
  3. Depending on your preferences, you can remove the proteins and add other items. This recipe is very flexible, so you should have no problems coming up with a delicious dish of your creation.

Storage

Pasta salad generally stores well in the refrigerator for a few days.
